Hi, All...Stargazer here. I just recently went apple picking in the NC mountains, and we bought some delicious apple cider fudge at the orchard--made with their homemade cider and little pieces of their apples. I'm pretty sure they won't part with the recipe since they're selling the stuff at a considerable mark up, so I was wondering if anyone out there has ever seen a recipe for the stuff. I'm thinking of experimenting with a vanilla fudge recipe until I get it close. The consistency is not anywhere near the solidness (if that's a word) of other fudges I've had. You could eat this stuff with a spoon--it's very sticky. But it's heavenly! I have found an apple pie fudge recipe on another site (but it has marshmallow creme in it, and I don't think the stuff I bought has that), and I did a search on this one and found nothing related to apple cider fudge. Please let me know if you turn up anything. It's worth a taste, especially if you love apples! Thanks!!

APPLE PEANUT BUTTER FUDGE
1 (6 oz.) pkg. chocolate chips 1/2 c. marshmallow creme 1/2 c. peanut butter 1 tsp. vanilla 2 c. sugar 2/3 c. cider Combine first 4 ingredients in a bowl. Cook sugar and cider over moderate heat to a soft ball stage, 240 degrees. Remove from heat and quickly add chocolate mixture. Stir until blended. Pour into 9" buttered pan. Cool and cut into squares.

Thanks so much, Marilynn, but the one I tasted definitely didn't have peanut butter, chocolate, or marshmallow creme in it. I appreciate your looking, and we'll have to try this one--it looks good! Guess I'll have to keep looking and experimenting, though. My first attempt was tasty but the wrong consistency and rather grainy. If anyone else comes across one, please let me know.
