4 boneless skinless chicken breast halves 1 & ½ c. Corn Flakes cereal ½ c. Biscuit mix, like bisquick mix 2 teaspoons Cajun seasoning (I like Tony Chachere's) 1 c. water 3 Tbs. butter or margarine
Flatten each chicken breast half to 1/4-inch thickness between sheets plastic wrap. Crush cereal and mix it with the biscuit mix and Cajun seasoning. Dip chicken into water, then coat with the dry mixture. Melt butter in a large nonstick skillet over medium heat. Cook chicken in butter 10 to 15 minutes on each side until juice is no longer pink when centers of thickest pieces are cut.
