Cajun Red Beans and Rice 4 2 cans Red Beans 3 can of water from red bean cans 1/2 pound smoked sausage 1 large onion, chopped 1 small bell pepper, chopped 1 rib of celery, chopped 2 tsp. garlic, chopped fine Tony's Cajun seasoning to taste 1/4 of a can beer 2 Tbs. vegetable oil 4-6 drops tabasco 1 c. rice, uncooked 2 c. water Rinse the red beans in with water, drain and set aside. Put oil in bottom of the pot and frying the sausage. Season the sausage really well with Tony's Cajun seasoning. When the sausage is about 1/2 cooked, stir in the chopped vegetables. Fry on Medium-Low until sausage is cooked and the vegetables are limp. Pour in the beans and water, cover and cook on medium-High Add the garlic, 3-4 drops tabasco, beer. While the mixture comes to a boil. Cook the rice in another pot with 2 cups of water. Reduce heat on beans to a simmer, and stir often. When the rice is done, the beans should be about done. Cook the beans down to the desired consistency, mash a few beans with a potato masher into a paste like texture (don't mash all of the beans, leave some whole). Serve beans over rice. Serves 3.
