Creole Bisque Makes 5 & ½ cups 161 calories per serving
2 Tbs. Butter 2 Tbs. Flour 1 can (1lb) stewed tomatoes with onions and bell peppers. ½ lb. Sole or haddock fish Fillets, cut in 1-inch pieces ½ lb. Zucchini, slices 1/4-inc thick 2 c. milk
Melt butter in sauce pan over low heat; stir in flour and salt until mixture is smooth. Stir in tomatoes. Add fish and zucchini; bring to a boil. Reduce heat, cover, and simmer 5 to 10 minutes, or until fish is opaque and zucchini is tender. Stir in milk; heat to serving tempter.
