Beef-Crust Pie
THE CRUST: 1/2 cup tomato sauce (1/2 of an 8-ounce can) 1/2 cup breadcrumbs 1 pound ground beef 1/4 cup chopped onion 1/4 cup chopped green pepper 1 teaspoon salt 1/8 teaspoon oregano 1/8 teaspoon pepper
Mix all above ingredients well. Pat meat mixture into a greased 9-inch pie plate; pinch 1-inch fluting at edge.
THE FILLING: 1 1/2 cups tomato sauce (1 1/2 8-ounce cans) 2 cups cooked rice 1/2 teaspoon salt 1 cup grated Cheddar Cheese
Combine rice, tomato sauce, salt, and 1/4-cup cheese. Spoon rice mixture into meat shell. Cover with aluminum foil. Bake in moderate oven (350 degrees F.) for 25 minutes. Uncover and sprinkle 3/4-cup cheese over top. Bake uncovered 10 to 15 minutes more until cheese melts. Cut like a pie.
Serves 5 to 6.
