1 pound (450 g) pork sausage 1 medium onion, sliced 1/8 inch (3 mm) 8 green pepper rings 8 (1 oz/28 g) slices mozzarella cheese 8 slices caraway rye bread 6 T (90 ml) butter or margarine
Form sausage into 8 patties. Place in large skillet. Cook over medium heat, turning once, until browned and cooked through (6 to 8 minutes). Add onion and green pepper. Continue cooking, stirring occasionally, until vegetables are crisply tender (4 to 5 minutes). Remove sausage patties and vegetables from skillet; pour off fat. To assemble each sandwich place 1 slice cheese on each of 4 bread slices. Top with 2 sausage patties, 1/4 of onion slices, 2 green pepper rings, 1 slice cheese and slice of bread. In same skillet melt 3 T (45 ml) butter until sizzling. Place 2 sandwiches in skillet. Cover; cook over medium heat until browned (3 minutes). Turn. Cover; continue cooking until cheese is melted (2 to 3 minutes). Remove sandwiches to platter; keep warm while grilling remaining sandwiches in remaining 3 T (45 ml) butter.
Makes 4 sandwiches.
