Barbecue-Style Orange-Glazed Oven Ribs Yield: 4 servings
1 c barbecue sauce; (250 mL) -preferably smoke flavored 1/2 c orange marmalade; (125 mL) 1/4 c red wine vinegar; (50 mL) 2 racks baby back ribs - about 3 1/2 lbs; (1.75 kg) - total
Preheat oven to 350F (180C). In a small bowl, stir barbecue sauce with marmalade and vinegar until well combined. Slice each rack of ribs into 2 or 3 portion-size pieces. Spread out ribs in a single layer in a very large baking dish or large shallow-rimmed roasting pan, about l6x12 inches (40X30 cm). Pour sauce over ribs and brush to evenly coat. Cover tightly with lid or foil and bake for 30 minutes. Turn ribs and continue baking, covered, for 30 minutes. Uncover and bake, turning and basting every 15 minutes with sauce in pan, until tender and browned, about 1 more hour.
