Boil the pork for 2-1/2 hours or until tender. Remove from water and rub with salt. In a skillet at moderate heat, add oil and quickly sear the pork. Place pork in roasting pan, sprinkle with brown sugar, and smother in sauerkraut. Bake for 30 to 45 minutes or until sauerkraut is well cooked. Remove from the oven and serve.
