Here's another recipe that has received good words on the air since it was on the Open Line. It too, answered a request for a coffee cake recipe that could he prepared the night before and left in the refrigerator until baking the next morning. COFFEE CAKE 2 cups flour ½ teaspoon salt 1 teaspoon cinnamon 1 teaspoon soda 1 teaspoon baking powder 1 cup sugar ½ cup brown sugar 2/3 cup shortening 2 eggs 1 cup buttermilk Sift first five ingredients together and set aside. Cream sugar, brown sugar and shortening. Add eggs. Beat well. Add sifted dry ingredients with buttermilk. Pour into greased 9 by 12-inch pan and sprinkle with topping. . TOPPING: ½ cup brown sugar ½ teaspoon cinnamon ¼ teaspoon nutmeg ½ cup pecan meats ½ cup chopped dates (optional) Bake 35 minutes at 350°. Can be mixed up the night before and left in the refrigerator overnight. Topping can also be added the night before.
