Breakfast Tacos
1 TB margarine or butter 1 cup cooked potato, diced 4 eggs, beaten 4 bacon slices, sautéed and crumbled OR 1/2 cup leftover taco meat 4 (8 inch) flour tortillas 3/4 cup (3 oz.) shredded Cheddar cheese 1/2 cup Pace Picante Sauce or Thick & Chunky Salsa
In medium skillet over medium heat, heat margarine. Add potato and sauté until lightly browned. Add eggs and bacon and cook until eggs are set but still moist.
Warm tortillas according to package directions.
Spoon about 1/2 cup potato mixture down center of each tortilla. Top with cheese and picante sauce. Roll up and serve.
Makes: 4 servings.
