CHOPPED COLE SLAW
4 cups new green cabbage, chopped fine 1 cup red cabbage, chopped fine 2 green onions, chopped fine 1 carrot, chopped fine 1/4 apple cider vinegar 2 tbsp. olive oil 2 tbsp. honey 1 tbsp. mustard Fresh ground black pepper Makes 6 servings
Mix vinegar, olive oil, honey, mustard, black pepper in a glass or non reactive bowl. Add shredded green and red cabbage, green onions and carrots. Toss, refrigerate and place in a plastic food bag prior to heading out. This slaw goes well on crispy rolls with grilled tuna, swordfish or mako.
