Ingredients 1 lb. Green beans, trimmed and cut into 1 1/2 inch pieces 2 lb. Ripe plum tomatoes or cherry tomatoes 2 cloves of garlic, crushed 1 cup fresh Italian parsley, minced 1/4 cup fresh basil leaves, minced Dash of black pepper 2 tbsp. Green olive oil 1 tbsp. Red wine vinegar or balsamic vinegar
Blanch the green beans in boiling water for about 2 to 3 minutes. Rinse them in cold water, drain and pat dry. Break them into small pieces. In a large salad bowl combine the green beans with the tomatoes, garlic, parsley, basil, and black pepper. Add the olive oil and vinegar and toss thoroughly until well mixed. Serve at room temperature or chill and serve later. Do not prepare more than 4 hours before serving. Serves 4.
