1 head iceberg lettuce - sliced into strips 2 potatoes - peeled, cut in chunks and boiled until fork tender 1 small onion - thinly sliced 5 thin slices of salt pork or pork fat back - skin removed and cut into small dice 1/4 cup vinegar - (more to taste if desired) salt and pepper to taste
1. Cook diced salt pork slowly in a deep saute pan until golden brown. (do not drain) 2. Add onion. 3. Drain and dry potatoes by putting drained potatoes back on hot burner and shaking pan until potato pieces have a dry appearance - about 2 minutes. 4. Add sliced lettuce to saute pan with salt pork and onion. 5. Pour vinegar over lettuce. 6. Add potato to top of lettuce. 7. Cover and cook over med. heat for 2-3 minutes. 8. Stir well, cover pan and cook an additional 5 minutes until all the lettuce is softened but not mushy.
We usually serve hot as a side dish with pork, fish, meatloaf or chicken.
