Warm Cumin Scented Corn Salad Serves 6 people
4 ears Corn, shucked and cut from the cob 1ea Tomato, large, chopped 1ea Red Onion, small, minced 2ea Garlic Cloves, minced 1/4C Extra Virgin Olive Oil 2T Red Wine Vinegar 1/4C Parsley, minced 1/2t Cumin, toasted & ground 1/2# Frisee or Watercress, trimmed Kosher Salt & Fresh Ground Black Pepper To Taste
Heat pan and add the oil.
Add the cumin and garlic and sauté for 30 seconds.
Add the onion & vinegar, season with salt & pepper and sweat for 2 minutes.
Add the corn, season with salt & pepper and cook for 5 minutes or until the corn is done.
Add the tomatoes, frisee and parsley, toss togather and taste.
Adjust the seasonings and server immediately.
