Best-of-the-West Bean Salad from Campbell's Kitchen
Prep Time: 10 min. - Chill Time: 2 hr.
3/4 cup Pace(R) Picante Sauce 2 tbsp. chopped fresh cilantro 2 tbsp. red wine vinegar 1 tbsp. vegetable oil 1 large green pepper, diced 1 medium red onion, very thinly sliced 1 can (about 15 oz.) kidney beans, rinsed and drained 1 can (about 15 oz.) pinto beans, rinsed and drained
Directions: MIX picante sauce, cilantro, vinegar, oil, pepper, onion, kidney beans and pinto beans. Refrigerate at least 2 hr., stirring occasionally. Garnish with additional cilantro. Serves 8.
