Pasta Del Mar Salad
3/4 cup mayonnaise 1/4 cup sour cream 1/4 cup lemon juice 3 T chopped green onions 1 tsp salt 1/4 tsp black pepper 1 lb imitation crabmeat, flaked 6 oz vermicelli (very fine egg noodles) 1 6-oz package frozen Chinese pea pods thawed Lettuce leaves 1 cup cashew nuts chopped salted Lemon wedges
In a small bowl, whisk mayonnaise, sour cream, lemon juice, green onions, salt, and pepper until blended. Set this dressing aside.
Cook, drain, and cool vermicelli.
In a large bowl, place crabmeat, vermicelli, and pea pods. Toss well.
Pour on dressing and toss until well coated.
Line individual salad plates with lettuce leaves. Scoop a mound of the salad on top, sprinkle with cashews, and serve with a lemon wedge.
Makes 5 servings. ;D
