This is for Annie who wanted a sour cream sauce for potato salad. I have been making my potato salad that way for years. POTATO SALAD WITH SOUR CREAM SAUCE You need: yolks of three hard boiled eggs 1 cup sour cream 1/2 cup mayonnaise 1/4 cup white wine or rice wine vinegar 1 teaspoon prepared mustard
Mash the yolks, then add the rest of the ingredients. Chop up the leftover whites and add to the potato salad ingredients.
For my potato salad I use: about 3-1/2 to 4 pounds potatoes, boiled, drained and cooled slightly Green onion to taste small jar of diced pimento, drained 1 jar Vlasic dill pickle relish, drained Chopped whites of 3 hard boiled eggs 1 teaspoon or more of celery seed Salt & pepper to taste Paprika for garnish
Mix together all the salad ingredients, then stir in the dressing. Sprinkle paprika over top. Chill. It gets better after several hours in the fridge. I usually try to make mine the day before I need it or at least early in the day.
