Three Potato Salad 3 med russett potatoes, peeled and cubed 3 med unpeeled red potatoes, cubed 1 lrg sweet potato, peeled and cubed 1 med onion, chopped 1 cup mayonnaise 2 T sugar 1 T white vinegar 1 t. salt 3/4 t. dill weed (I used tarragon) 1/2 t. pepper Place the potatoes in a Dutch oven; cover with water. Cover and bring to a boil. Reduce heat and cook for 20-30 min or until tender. Drain and cool. Place potatoes in a large bowl; add onion. In a small bowl, combine the remaining ingredients. Pour over potato salad and toss gently to coat. Cover and refrigerate overnight. 15 servings. Jay
