Ingredients: 1 tbsp. olive oil 4 green onions 3 pounds ripe tomatoes salt and freshly ground black pepper 2 tbsp. fresh basil leaves, torn 1 large cauliflower head, cut into florets Skin, seed and roughly chop the tomatoes. Heat the oil in a pan and add the onions and tomatoes. Cook for 1-2 minutes. Stir in the salt, pepper and basil and cook for 1-2 minutes more. Meanwhile, cook the cauliflower in boiling, salted water for 4-5 minutes until almost tender. Drain well. Arrange the cauliflower on a serving plate and top with the tomato mixture. Garnish with fresh basil.
