6 - 8 cups salad greens (Bibb lettuce, baby spinach, baby romaine or radicchio combinations work well) 1 and 1/2 cup oranges, seeded and chopped 1/4 cup black olives, sliced 1/4 cup Feta cheese, crumbled 1/4 cup dry roasted sunflower seeds
Dressing
1/4 cup fresh orange juice 1/2 tsp. dry mustard 1 Tbsp. olive oil 1/4 cup red wine vinegar 1 garlic clove, minced Salt and pepper to taste
Combine salad ingredients and toss. Combine dressing ingredients and shake well. Pour over salad and toss just before serving. You'll love this elegant salad.
The Skinny: This salad is just right as is. You could skip the olives but they really add to the salad. The Feta cheese is already lower in fat than most cheeses so you are ahead of the game in that respect.
