Broccoli Salad 2 heads broccoli, washed and trimmed into bite-sized pieces 1 cup Monterey Jack cheese, shredded 1 cup sharp cheddar cheese, shredded 1/3 cup real bacon bits 1/2 cup walnuts, chopped 1/2 cup sugar 1/2 cup mayonnaise 2 Tbsp. apple cider vinegar Salt and pepper to taste Combine first 5 ingredients and toss. Combine last 4 ingredients and stir well. Pour over salad and mix well. Chill until ready to serve. Remember to peel the broccoli stalk and then cut the stalk into thin slices. These little slices are similar in texture to sliced water chestnuts and just have to be good for you. The Skinny: Use light cheeses, light mayo and your favorite sugar substitute. Jay
