Mushroom Salad Prep: 10 min. 13 ounces baby mushrooms, sliced 3 shallots or green onions, chopped 1 carrot, grated 2-3/4 Tbs. fresh parsley, chopped 1 Tbs. plus 1 tsp. fresh chives, chopped 1 cup bean sprouts 1/3 cup olive oil 1/4 cup lemon juice 2-3/4 Tbs. cider vinegar 1/2 tsp. sugar Combine first 6 ingredients in a medium bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
