More Soulful Recipes April 15th, 2004 Publisher: Willie Crawford Editor: Joleene www.chitterlings.com From: "Dorothy Ratliff" To: posts@chitterlings.com THE OLD EL PASO TOSTADA SALAD Serves: 6 2 ripe avocados, mashed 1 tablespoon - lime juice 1 tablespoon - green onion, thinly sliced 1/4 cup - sour cream 1/4 cup - taco sauce 1/2 teaspoon - salt 1 teaspoon - cooking oil 1 (16-ounce) can - refried beans 1/2 cup - Cheddar cheese, shredded 6 tostada shells 3 cups - lettuce shredded 1 cup - tomato, chopped 6 slices - avocado Mix avocado, lime juice, onion. Blend in sour cream, taco sauce, and salt. Chill. Heat refried beans in oil; stir in cheese until melted. On heated tostada shells divide and spread beans, then lettuce, and tomatoes.
