More Soulful Recipes April 15th, 2004 Publisher: Willie Crawford Editor: Joleene www.chitterlings.com From: "Dorothy Ratliff" To: posts@chitterlings.com HAWAIIAN CHEF'S SALAD Serves: 2 1 - pineapple 2 cups - lettuce, shredded 1/2 pound - asparagus, cooked and cooled 4 slices - coked ham 2/3 cup - Cheddar cheese, chunks 1/2 cup - cucumber, sliced 1/3 cup - plain yogurt 1 tablespoon - catsup 1/2 cup - vinegar 1/2 teaspoon - sugar 1/8 teaspoon - garlic salt 1/8 teaspoon - onion salt Dash pepper Cut pineapple in half lengthwise through the crown. Remove fruit with curved knife, leaving shells intact. Core and dice fruit. Reserve half for other use. Fill pineapple shells with shredded lettuce. Arrange diced pineapple, cooked asparagus, sliced ham, cheese chunks and cucumber slices on lettuce. In a small bowl, blend together yogurt, catsup, vinegar, sugar, garlic salt, onion salt and pepper. Serve over salads. ;D
