Leaf-Lettuce Salad (Finnish)

2 quarts leaf lettuce -- or other
garden greens
1/4 cup fresh lemon juice
1 tablespoon sugar
1/2 teaspoon salt
dash freshly ground black pepper
1/4 cup heavy cream

Wash and dry lettuce. Tear lettuce greens into 1 to
2-inch pieces. Place in a salad bowl and refrigerate.
To serve, combine lemon juice, sugar, salt and pepper
in a small bowl. Beat with a whisk while slowly add
cream. Continue beating until blended and creamy.
Drizzle dressing over lettuce; toss to distribute.
Serve immediately.

Serves 6 to 8.
