Alphabet Macaroni Salad
1 (16 oz.) acini de pepe or alphabet macaroni 1 3/4 cups pineapple juice 2 eggs 1 cup sugar pinch of salt 1 (8 ounce) can crushed pineapple, drained 1 (20 ounce) can chunk pineapple, drained 2 (8 ounce) cans mandarin oranges, drained 2 cups small marshmallows 1 (10 oz.) carton Cool Whip
Cook and drain macaroni, Set aside. Cook pineapple juice (use as much of the drained juice as you can), eggs, sugar and salt until thick and pour over macaroni. Refrigerate for several hours. Add crushed and drained pineapple, mandarin oranges, marshmallows and Cool Whip to macaroni mixture. Chill before serving.
