Wild Rice Salad
2 cups wild rice, cooked 1/2 cup cooked corn kernels 1/2 cup diced red bell pepper 1/2 cup chopped tomato 1/4 cup cooked green peas 1/4 cup diced red onion 1/4 cup green beans cut into pieces and cooked 4 tablespoons frozen apple juice concentrate 2 tablespoons red wine vinegar 2 tablespoons chopped fresh basil 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh tarragon 1 tablespoon fresh lime juice Freshly ground black pepper Salt
In a large bowl. combine all the ingredients. Toss well and season to taste with freshly ground black pepper and salt.
Serving size = 1 cup, 175 calories, 0.8 gram fat, 0 milligrams cholesterol, 30.6 milligrams sodium without added salt
THis wild rice sounds really nice apart form some of the ingredients you cant buy here in England ;D
