Cottage Cheese and Pineapple Salad
3 oz lemon Jello 1 cup hot pineapple juice or water 1 cup cottage cheese 1 cup crushed pineapple, drained 1 large carrot, grated 1 cup mayonnaise 1/2 cup evaporated milk
Dissolve Jello in hot liquid. When cool add cottage cheese, pineapple and carrot. Mix mayonnaise and milk, add to the cottage cheese mixture.
Makes 10-12 servings.
