Sweet Orient Express Cucumber Salad
2 Cucumbers thinly sliced
2 T rice wine vinegar
1/4 cup extra virgin olive oil
1 T sugar
1 T soy sauce
Fresh ground pepper (to taste)
Fresh chopped dill (as garnish)
Begin by thinly slicing 2 Orient Express cucumbers (or use your
favorite - seed them if necessary). Place sliced cucumbers in a
bowl. Add the rice wine vinegar, extra virgin olive oil, sugar, soy
sauce and fresh ground pepper to taste. Stir thoroughly to coat
cucumbers. Garnish with fresh chopped dill.
Allow the salad to marinate an hour or more in the refrigerator
before serving.
Makes 4-6 servings.
