1 cup beef stock 1 28oz can undrained tomatoes 1 cup sliced pepperoni 1/2 tsp dried basil 1/2 tsp oregano 1 tbsp oil 1 small onion, chopped 1/2 cup sliced mushrooms 1/4 cup green pepper grated mozzarella cheese
Combine first 5 ingredients and simmer. Lightly fry vegetables in oil and add to tomato mixture. Simmer 5 minutes more. Ladle soup into onion soup bowls, or bowls that can be put under a broiler. Cover with grated cheese and broil until cheese is bubbling. DO NOT ADD SALT!
