1 lg. onion, chopped 2 T. butter or 1 T. oil 1 lb. frozen peas 2 1/2 c. chicken stock 8 oz. frankfurters salt freshly ground black pepper croutons
Sauté onion in butter or oil for 3 min. Add peas and stock, bring to a boil and simmer for 2 min. Puree soup in a blender until smooth, then our it back into the pan. Cut frankfurters into chunks and add to the soup. Heat through and season. Serve topped with croutons. Makes 4 servings.
