Chicken Enchiladas 1 chicken (whole or pieces) 16 oz shredded cheddar cheese 1/2 cup chopped onion 2 cans cream of chicken soup 8 oz sour cream 1 small can chopped green chilies 12 corn tortillas Boil chicken and debone. Save 1-1/4 cups of broth. Add chicken, chicken broth, onion, chicken soup, sour cream, and green chilies together in large bowl. Butter a 9x12 pan. Cut each corn tortilla into three strips, place 1/2 of them on bottom of buttered pan, pour 1/2 of chicken mixture on top, pour 1/2 of cheese on top. Layer again with the second half of the tortillas, mixture and cheese. Cover with foil and bake at 350 degrees for 30 minutes.
