Tomata Gazpacho Ingredients: 1/2 each red onion, peeled and quartered 1 rib celery, coarse chop 1 clove garlic, peeled 4 each Roma Tomatoes, stemmed and halved 1 each seedless cucumbers, peeled rough chopped 1 each red peppers, cored and chopped small 1/2 each jalepeno peppers, stemmed Lemons to taste 1/2 tbsp Worcestershire Sauce 1/2 tsp Tabasco Sauce 1 quart V-8 or tomato juice 1/2 tbsp cilantro, picked and chopped 1/4 tsp cumin, toasted and ground Salt to tast Cayenne to taste 2 ounces Extra Virgin Olive Oil
Directions:
In a blender, combine onions, celery, garlic, tomatoes, cucumber, peppers.
Season lightly with salt and pepper and allow to rest for 5 minutes.
Add lemon juice, Tabasco, Worcestershire, cumin and cilantro and puree for 5 minutes.
Add V-8 jouce (or tomato juice) and puree until smooth.
Add olive oil in a steady strem while continuing to mix.
Taste and season. Store on ice. Serve in chilled bowls.
Top with your choice of grilled corn, peppers, onions, cucumbers, croutons, cooked shellfish or creme fraiche
