Squash Casserole 2 0r 3 lbs sliced yellow squash 1 medium onion sliced Steam the above until tender. Drain and mash Add 1/2 stick butter or margarine salt and pepper to taste 2 beaten eggs 1/2 cup sour cream (more if desired) Top with grated cheese and bread or cracker crumbs if desired. Bake 350 degrees approx 45 minutes I have had this and it's delicious! I used Creme Fraiche rather than sour cream and I'm sure I used more than half a cup.
