HAM CASSEROLE Serves 4 Here is a good recipe to use up some of that leftover ham after Easter. This is a recipe I got from my sister and is really very good.
1 cup cubed cooked potatoes ½ cup minced onion 2 TBs butter 3 TBS flour ½ tsp each salt and pepper 1 ¼ cup milk ½ cup shredded swiss cheese 2 cups cubed cooked ham 1 ½ cups bread crumbs, mixed with 2 TBS melted butter
Cook onions in butter til soft. Stir in flour, seasonings and cook for one minute. Stir in milk and cook until thick. Stir in cheese to melt. Mix in ham and potatoe. Place in buttered casserole dish. Top with buttered crumbs. Bake at 400*F for 30 minutes.
