Corn Bread Taco Bake 1 1/2 pounds ground beef 1 pkg (about 1 1/8 oz) taco seasoning mix 1/2 cup water 1 can (12 oz) whole kernel corn, drained 1/2 cup chopped green pepper 1 can (8 oz) tomato sauce 1 pkg (8 1/2 oz) corn muffin mix, plus ingredients to prepare mix 1 can (2.8 oz) French's French fried onions 1/2 cup (2 oz) shredded cheddar cheese Preheat oven to 400 degrees. In large skillet, brown ground beef; drain. Stir in taco seasoning, water, corn, green pepper and tomato sauce; pour mixture into 2-qt casserole. In small bowl, prepare corn muffin mix according to pkg directions; stir in 1/2 can of French fried onion. Spoon corn muffin batter around edge of beef mixture. Bake, uncovered at 400° for 20 minutes or until corn bread is done. Top corn bread with cheese and remaining onions; bake, uncovered, 1 - 3 minutes or until onions are golden brown. Serves 6 ;D Jay
