Raisin Cream Pie
1 recipe for Single-Crust Pie 3 eggs 1 cup sugar 1 TB lemon juice 1 TB rum 2 TB butter or margarine, melted 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. salt 1 cup raisins 1/2 cup chopped walnuts 1. Prepare and roll out pastry. Line a 9" pie plate with pastry. Trim and crimp edge as desired. Set aside.
2. For filling, slightly beat eggs with a rotary beater or fork. Stir in sugar, lemon juice, rum, butter or margarine, cinnamon, nutmeg, and salt. Add raisins and walnuts; mix until just combined. Pour filling into the pastry-lined pie plate. Bake in a 375 degree F., oven for 30 minutes or until center is set. Cool on a wire rack. Cover and refrigerate within 2 hours.
