Coconut Custard Pie
1 (9 inch) unbaked shell 4 eggs, slightly beaten 1/2 c sugar 2 1/2 c milk 1 tsp vanilla 3/4 c coconut
Preheat oven to 425 degrees.
Combine eggs, sugar, salt, milk, vanilla and 1/2 cup of coconut. Pour filling into shell and sprinkle remaining coconut on top.
Bake 30 minutes or until thin-bladed knife insterted 1 inch from edge comes out clean. The center will look soft but will set later.
