I enjoyed this very much. Give it a try... Pressure Cooker- Chicken in Light Mustard Cream 1/4 cup prepared mustard 1-1/2 tsp. salt 1/4 tsp. pepper 1 (3 pound) frying chicken, cut into 8 pieces (2 inches thick) 1/3 cup seasoned bread crumbs 1/4 cup olive oil 3 shallots, minced 1 garlic clove, crushed 1 cup chicken broth or stock 1 TBSP sherry (optional) 1 tsp. tomato paste 1/3 cup half and half (I used light cream) 1 TBSP flour Blend mustard, salt, and pepper in a small bowl until smooth. Brush on chicken pieces and roll pieces in bread crumbs. In PC, heat oil. Add chicken and sauté in hot oil until brown on all sides, using long handled tongs to turn. Drain on paper towels. Add shallots and garlic and sauté in oil for 1 minute. Stir in broth, sherry, and tomato paste. Blend in remaining seasoned mustard. Add chicken pieces. Secure lid. Over high heat, develop steam to medium-high pressure. Reduce heat to maintain pressure and cook for 9 minutes. Release pressure according to manufacturer’s directions. Remove lid. Place chicken on a platter. Combine half and half and flour in a small bowl. Stir into cooking liquid and cook, stirring, over medium heat until thickened. Spoon sauce over chicken, Makes 6 servings. Cook’s note: For a deep mustard flavor, consider trying a dark mustard. The general rule to remember in selecting the perfect mustard is that light-colored mustards give a more delicate flavor. The darker the mustard, the more intense the mustard flavor. This would be great served with noodles. The sauce was awesome!! I have skin removed from the chicken to cut the fat. TEXT

First - read your owners manual - you'll find warnings about using oil under pressure, and with good reason. Unless you bought a pressure fryer, you cannot use your pressure cooker for deep fat frying under pressure. Read this article for more info: missvickie.com/howto/fry/kfc.html

There are many great PC cookbooks out there. Go to the nearest library or book store and browse before you buy. I have about 5 in my library and use them all for certain recipes.
I also make wonderful cheesecakes in it. But again read YOUR INSTRUCTION MANUAL and some cookbooks to see what you can really do with the PC. I have a few recipes that Linda just posted. They are some of my favorites.
Good Luck. Arlene
