Ingredients 1 cup shortening 1/2 cup white sugar 1/2 cup brown sugar 1/2 teaspoon vanilla 1 egg 2 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt *Little red food coloring to tint the dough (or leave plain and use colored sugars to give them a red appearance.) *Popsicle sticks
Directions: Pre-heat oven to 350 degrees. In a medium bowl, cream together the shortening, white sugar and brown sugar. Beat in the egg and vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture. Add a few drops of food coloring to your desired color of dough. Roll the dough into walnut sized balls. Push craft sticks into the center of each ball. Place balls, with sticks parallel to the cookie sheet, 3 inches apart onto an ungreased cookie sheet. Flatten them slightly using the bottom of a glass dipped in sugar. This is the time to decorate with sprinkles or colored sugar if you desire to make it more of a Valentine's day treat!
Bake for 8 to 10 minutes in the pre-heated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. When cookies are completely cool, wrap in plastic wrap and tie with a pretty ribbon. Makes approx. 24 cookie pops.
NOTE: Use these as a Valentine's day gift for your children to exchange instead of 'cards'. Just make up little tags to lace through the ribbon with your child's Valentine greeting and name.
Alternative Use: If you are a room mom and looking for ideas to make the table fun for the class party, use the pops in a Valentine's Day stryofoam design. Or just stand them up in a pretty vase!
