You can dye hardboiled eggs in the shell an unappetizing green color by adding a handful of purple onion skins to the hot water during the last few minutes. They make an interesting subject if you want to serve "green eggs and ham"
My question is; for years I did something similar with the skins of yellow onions, only it produced a truly gorgeous deep sunflower gold color,- now whenever I try this the eggs turn golden brown, very like a rhode island red's eggs natural eggshell color. I'm not sure what the problem is but I suspect the eggs may be cracking in the dyebath and the protein leaking out is affecting the finished color. Anybody else have this problem?
