chitterlings.com Old Fashion Buttermilk Cornbread Posted By: Ann Date: Thursday, 27 November 2003, at 3:25 a.m. 1 1/2 c cornmeal 1 c flour 1/2 c sugar 1 tsp salt 1 Tbl baking powder 2 eggs 8 Tbl butter,cooled,melted 6 Tbl shortening,cooled,melted 1 1/2 c buttermilk Oven 350 Beat eggs slightly, add butter, shortening and stir in milk. Sift in seperate bowl cornmeal, flour, sugar, salt,and baking powder. Pour eggs, shortening, butter, milk into dry ingredients and beat together for about 1 minute or until smooth. Do not overbeat. Lightly butter a 9x5x3 loaf pan or a 8x12 shallow baking pan and pour in the batter. Bake in the center of oven for 30 minutes or until bread comes slightly away from the edge of pan and is golden brown. Great for making Cornbread Dressing!
