My mother-in-law makes the old fashioned candied yams. If we each take our casseroles, mine are eaten and hers are left. Personally, I hate sweet potatoes so... Sweet Potato Casserole Canned Sweet Potatoes (enough to cover bottom of baking dish) Cinnamon (to taste) Butter or Margarine Brown Sugar Crushed Pineapple (lg. can, undrained) Chopped Pecans (could use walnuts) Marshmallows Drain potatoes, dump in pan, cut large pieces into smaller ones. Sprinkle with cinnamon. Dot generously with margarine. Cover generously with brown sugar. Spoon pineapple over top evenly, adding any remaining juice (pour into corner to not wash toppings off). Sprinkle with nuts. Cover. Bake at 350* for 1 hr or so. Sprinkle marshmallows over top. I use miniature, can use large, just cut into pieces. Return to oven until marshmallows melt and brown.
