Italian Panettone My grandson Scott gave me a bread making machine 3 years ago. I tried it a few times and liked it but got busy and forgot about it. He mentioned it again a few months ago so I tried it again with new recipes from magazines and books and we are enjoying fresh bread at least once a week. This is a recipe from Chatelaine Dec.2000.
1/2 cup water 2 tbsp. butter or vegetable oil 2 large eggs 1/2 tsp. rum or vanilla extract 1/4 tsp. salt 1/4 cup sugar 2 tbsp. instant skim milk powder 1 tsp. each of grated lemon and orange peel 1/2 tsp. anise seeds 2 1/2 cups all purpose flour 1/4 tsp. bread machine or instant yeast 2 tbsp. each of finely diced candied orange and citron peel 1/4 cup golden raisins 1/4 cup toasted slivered almonds Add all ingredients with exception of peel, raisins and nuts to machine according to manufacturer's directions. Select sweet or basic white cycle. Add peel, raisins and nuts at the ingredient signal ( or about 20 to 30 minutes into cycle). For a soft crust brush finished loaf with melted butter and sprinkle with sugar. To frost, stir 1/2 cup sifted icing sugar with 2 tsp. each of room-temperature butter and orange juice and 1 tsp. grated orange peel. Spread on cooled loaf. Makes 12 slices.
