Grapefruit-Lime Ring Mold
1 3-ounce package cream cheese
1 cup boiling water
2 3-ounce packages lime-flavored gelatin
2 cups reserved grapefruit syrup
1 quart drained grapefruit sections
Maraschino cherries
Preparation
Shape cheese into 8 balls; chill.
In saucepan, add boiling water to gelatin and stir over low heat until completely dissolved. Add grapefruit syrup.
In 5-cup ring mold, spoon gelatin mixture to cover bottom; arrange 8 grapefruit sections, cherries and cheese balls. Spoon in gelatin mixture slowly to barely cover fruit; chill until almost firm.
Chill remaining gelatin mixture until syrupy; fold in remaining grapefruit. Spoon on top of first layer. Chill until firm.
To serve: unmold on salad greens and fill center with additional fruit as desired.
For individual molds, prepare additional cheese balls. Mold grapefruit and cherries; decorate center with cheese ball.
