2 lbs. beef "stew meat", cut in 1" cubes (you usually buy the beef already cut up & labelled as "stew meat,but depending on how your butcher has cut it, you may wish to cut the cubes into smaller pieces for easier eating.)
1/4 c. flour 1 1/2 tsp. salt 1/2 tsp. pepper 1 1/2 c. beef broth (low fat & low sodium canned products should sub just fine) 1 tsp. Worcestershire sauce 1 clove garlic (I used minced garlic purchased in a jar) 1 bay leaf 1 tsp. paprika 4 carrots, sliced 3 potatoes, diced 2 onions, chopped 1 stalk celery, sliced (optional) 1 or 2 cups Okra - I use frozen, no need to thaw. (optional, but okra adds a special flavor, plus thickens the stew nicely)
Place meat in CP. Mix flour, salt & pepper, and pour over meat; stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover & cook on Low 10-12 hrs., or on High 4-6 hrs., stirring occasionally. Enjoy!
