Gooseberry Butter Makes 6-6oz. Glasses
4 c. gooseberries 4 c. sugar
Wash and drain berries, mash, and measure. Place pulp and juice in pan and bring to a boil, stirring constantly. Add sugar; stir until sugar is dissolved. Simmer about 20 minutes, or until syrup threads when dropped from spoon. Pour into glasses
