Green Bean Soup
Ingredients 1 ham bone 1 Cup cut green beans 2 medium potatoes a bunch of summer savory enough to fill the circle when placing your pointer finger and thumb together 1 Cup shelled peas 2 medium carrots, cut 1 small onion 1/2 Cup shredded parsley 1/4 Cup of butter
Cover ham bone with water and boil for 45 minutes. Skim the scum as it cooks. Remove the bone and add vegetables. Simmer for about 1 hour. About 15 minutes before serving, add the summer savory and parsley. Remove when serving. Just before serving, add the butter. Stir and serve hot.
