Chicken Cacciatore for the Crockpot
1 large onion, finely chopped 8 to 10 boneless, skinless chicken breasts 2 cans (6 oz. each) tomato paste 1 can (28 oz.) diced tomatoes (do not drain) 1/2 cup each, diced green pepper and celery 1/2 tsp. salt 1/4 tsp. pepper (or to taste) 1/2 tsp. minced garlic (2 large cloves) 1 tsp. dried oregano 1 tsp. dried basil 1/2 tsp. celery seed
Saute onion in a bit of oil until lightly golden. Set aside.
In a medium bowl, combine all ingredients (except chicken) and stir until well blended.
Place a single layer of meat in bottom of crockpot, coat with a bit of sauce; place any addition chicken pieces between layers of sauce. Pour any remaining sauce over meat. Cover; cook on LOW for 7 hours or on HIGH for 3 hours.
This recipe makes lots of sauce, so you could easily put in 2 or 3 more chicken breasts
Serve with hot spaghetti coated with some sauce (additional sauce can be served in a bowl) and a Ceasar salad
Serves 8-10.

This was pretty good. I did leave a couple things out when I made it. (onion, green pepper, celery) One, because I needed to go to the grocery store and two, because I don't have green pepper eaters.
It was still good. I'll definately make this one again.
