Extra Peppers?
When you have more green, red, yellow, or orange peppers than you can use, slice or dice the pieces (remove any soft spots), throw them in a freezer bag and pop them in the freezer. They don't have to be blanched and can be used later in any recipe that doesn't require them to be crisp. Leftover diced onions and celery can be treated likewise Jay

Good morning Jay!
I have been doing this for several years. Works great! They can be put in dishes you fix right from the freezer, too! It is so nice to have these already chopped and ready to pop in a dish.

Another great idea is to dice up and put in canning jars and fill with Tomato juice and process in a boiling water bath and use in pasta sauces later in the year or soups. I have done that for years.
